Rotini Processing Plant & Machinery Solutions
Rotini processing turns semolina dough into short, tightly coiled corkscrew pasta. The flour is sifted and weighed, mixed with water into a crumbly dough, extruded through a helical die that twists the strand, cut to length, then dried in stages and packed.
Complete Rotini Process Flow
Semolina is drawn from storage, lifted, screened and dosed into the mixer against the recipe.
Water is added to the semolina and the mass is worked until it is uniformly hydrated. A consistent dough is what keeps the coil tight and even after extrusion.
The dough passes through a die that imparts the corkscrew twist, and the twisted strand is cut to short lengths as it leaves the die face.
The coils are dried gradually with controlled air so the outer surface does not case-harden before the core dries. Air humidity is managed alongside temperature during the hold stages.
Broken pieces and fines are screened out, then the graded rotini is weighed into pouches, coded and sealed.
