Rice milk is a plant-based drink made by cooking cleaned rice, breaking down its starch into simpler sugars, then milling the mash, separating the solids and blending the liquid with water and oil before homogenising, heat treatment and filling.
Complete Rice Milk Process Flow
Incoming rice is passed over screens and a de-stoner to take out chaff, dust, stones and stray metal. Clean grain protects the mill and keeps grit out of the finished drink.
Cleaned rice is washed and then cooked in a jacketed vessel until the starch granules swell and gelatinise. Gelatinised starch is what the enzymes in the next stage are able to act on.
Enzymes are dosed into the cooked mash, which is held under gentle stirring while the starch is broken into simpler sugars. This conversion is what gives rice milk its sweetness.
The converted mash is milled down to a fine slurry and the insoluble rice solids are drawn off. What remains is the liquid base of the drink.
Water, oil and mineral blends are mixed into the base to set body and mouthfeel. The mix then passes through a homogeniser so it stays uniform and does not settle in the pack.
The drink is heat-treated, cooled and filled into cartons, bottles or pouches on a closed line. Sealed packs are coded and collated into cases for dispatch.
