Ravioli Processing Plant & Machinery Solutions
Ravioli is a filled pasta: a savoury filling is enclosed between two thin dough sheets, then sealed and cut into individual pockets. The filling is prepared and cooled separately, deposited onto a moving sheet, covered, crimped and cut, after which the pockets are frozen or chilled and packed.
Complete Ravioli Process Flow
Cheese, vegetable or meat ingredients are size-reduced, cooked and blended into a filling, then cooled before it meets the dough. A warm filling would soften the sheet and break the seal, so the filling is chilled first.
A separate dough is mixed and formed into two thin, even sheets, one for the base and one for the cover.
Filling is deposited at fixed intervals on the base sheet, the cover sheet is laid over it, and the pockets are pressed, sealed and cut apart. Seal integrity decides whether the ravioli survives boiling without bursting.
Formed ravioli is chilled and frozen piece by piece so the pockets do not fuse together in the bag.
Frozen pockets are weighed into bags, sealed, checked for metal and pack weight, and cased for cold despatch.
