Plant based food processing converts soya, pulses, wheat and other plant proteins into textured meat alternatives such as chunks, granules, patties and nuggets. Dry protein blends are hydrated and extruded to build a fibre-like texture, then formed, coated, cooked, frozen and packed.
Complete Plant Based Food Process Flow
Protein flours, starches and dry ingredients are tipped, screened for metal and weighed out to recipe. They are blended into a uniform base mix, since an even dry blend decides how the protein later texturises.
The blend is hydrated and passed through an extruder, where heat and shear align the protein into a fibrous structure. This texturising step is what gives plant based products their meat-like bite.
Textured protein is combined with binders, fats and flavours, then formed into patties, strips or nuggets. Products meant to be fried are coated with batter and breading at this stage.
Formed pieces are fried or cooked to set the surface and colour, then cooled. They are frozen individually so the pieces stay loose and separate inside the pack.
Frozen pieces are weighed, filled into pouches or trays and sealed. Each pack is checked for foreign matter and correct weight before cartoning.
