Urad and moong arrive with field trash, dust, stones and metal, all of which are removed before milling. Cleaned grain is held in bins until the conditioning stage is ready to take it.

The husk of gram sticks to the kernel, so the seed surface is first scratched, or pitted, to open a path for the treatment. Oil and water are then mixed through the grain so that the husk lifts away in the milling that follows.

Treated grain is held so the moisture can move into the seed, then dried before it goes to the huller. Moisture is checked on each batch as it comes off the dryer.

Grain passes through the huller in repeated light passes rather than in a single heavy pass, and is lifted back to the huller between passes. Husk is drawn off between passes and the dehusked kernel is then split to give dhuli dal.

Split gram dal is polished and then separated into whole, split and broken fractions. Powder and small brokens are carried away on their own stream.

Part of the urad and moong dal is ground into flour for papad, vada and batter use. The ground stock is sifted and the coarse fraction is returned to the mill.

Colour sorting removes husk-bearing, discoloured and off-grade grains before packing. Dal goes into consumer pouches and bulk sacks, and every pack is coded.
