Fusilli Processing Plant & Machinery Solutions
Fusilli is a spiral pasta made from durum semolina, formed by extruding dough through a die that gives the strand its twist before it is cut short. The cut spirals are shaken loose, dried slowly to avoid cracking, cooled and packed.
Complete Fusilli Process Flow
Semolina is tipped, screened for foreign matter and conveyed to the mixing station under dust control.
Semolina and water are combined and kneaded into a plastic dough suitable for a shaped die. Recipe dosing is held to a fixed ratio so the spiral pitch stays consistent through the run.
The dough is extruded through a spiral-forming die and cut into short pieces, then separated so the freshly cut spirals do not stick to one another.
Fusilli is spread on trays and dried slowly, then held so moisture equalises across the twisted section. The thick and thin parts of a spiral dry at different rates, which is why the hold stage matters.
Cooled fusilli is weighed, wrapped and inspected before secondary packing.
