Crates and bins are emptied onto a collecting table that spreads the fruit into a single, even flow. A holding bin lets the line keep running between vehicle deliveries.

Fruit is washed and rinsed to remove field dust and residues, then surface dried with moving air. Brushing gives the skin an even finish before the fruit reaches the graders.

Fruit is separated by colour, size and visible defect so each grade goes to the market that pays for it. Rejected and second-grade fruit is diverted rather than discarded, and feeds the processing lines.

Fruit routed to processing is peeled, halved or de-seeded and cut to the shape the downstream line needs. Whole fruit for the fresh market bypasses this stage entirely.

Cut fruit goes to the dryer, to the freezer or to crushing for pulp and juice, depending on the order being run. A short blanch is used ahead of drying and freezing for the varieties that need it.

Graded fruit is packed into trays, punnets or films, then labelled and date coded. Packs are collated into cartons and palletised for transport.
