Culinary herb processing handles leafy herbs such as mint, basil, parsley and curry leaf, which are sold dried whole, cut or ground. The fresh herb is washed and de-watered, dried or freeze dried at low temperature to hold colour and aroma, cut to size and air classified to separate leaf from stalk.

How it works

Complete Culinary Herbs Process Flow

Reception & Washing

Fresh herb is held cool on arrival, then washed and rinsed to remove soil, grit and insects. Handling is kept gentle, because bruised leaf darkens before it reaches the dryer.

De-Watering

Surface water is blown and shaken off the leaf so the dryer is not asked to remove wash water. Even loading onto the dryer belt or tray keeps the drying rate uniform.

Drying or Freeze Drying

Herbs are dried in low-temperature air, or freeze dried where the fresh colour and shape have to be retained. Freeze drying is chosen for premium grades; tray and hot air drying serve standard grades.

Cutting & Classification

Dried herb is cut or chopped to the cut size ordered and screened to remove fines. Air classification separates the light leaf from heavier stalk, and magnets and metal detection follow the cutters.

Packing

Dried herbs are bulky and light, so they are filled into sachets or pre-made bags and coded, with nitrogen flushing where aroma has to be protected.
