Coconut flakes are broad slices of pared coconut kernel, dried and often toasted or sweetened for use in bakery, cereals, snacks and confectionery. Mature kernel is dehusked, deshelled and pared, sliced into flakes, blanched, dried and where required roasted, then graded and packed.
Complete Coconut Process Flow
Nuts are dehusked and deshelled and the testa is pared off, because a flake is a broad visible piece and any brown skin shows in the pack. Pared kernel is rinsed and drained before slicing.
Pared kernel is sliced into wide flat flakes rather than shredded, which is what separates flakes from desiccated coconut. Slice thickness is set on the cutter to suit whether the flake will be dried plain or toasted.
Flakes are blanched, and where a sweetened flake is called for they are coated with syrup in a pan mixer before drying. Syrup is prepared in a jacketed vessel so that the coating is applied at a steady consistency.
Flakes are dried in a continuous hot-air dryer, laid out in a single layer so that they dry without curling together. Moisture is checked on the dried flake before it moves to roasting or grading.
Where a toasted flake is required, dried flakes are roasted to develop colour and flavour, then cooled straight away so that colour does not carry on developing. Fines released in roasting are drawn off before packing.
Flakes are graded and broken pieces screened out so that the pack shows whole flakes. Graded flakes are weighed, formed into pouches with nitrogen flushing where required, and inspected for metal before cartoning.
