Chowmein Processing Plant & Machinery Solutions
Chowmein noodles are made from wheat flour dough that is sheeted and slit into thin strands, then steamed rather than dried raw. Steaming sets the noodle so it cooks quickly; the strands are then dried or fried, cooled and packed in cakes or loose portions.
Complete Chowmein Process Flow
Flour is sifted and blended with water, salt and alkaline salts, then mixed to a crumbly dough. The alkaline solution is what gives chowmein noodles their springy bite and colour.
The dough is formed into a continuous sheet, reduced in thickness through successive rolls and slit into strands.
The cut strands are steamed so the starch sets and the noodle becomes pre-cooked. Pre-cooking at this stage is what allows the finished noodle to be stir-fried directly.
Steamed noodles are either fried to drive off moisture or dried with hot air, depending on whether a fried or non-fried product is being made.
Noodles are cooled to ambient before they are wrapped, otherwise trapped heat condenses inside the pack.
Portions or cakes are wrapped, coded, checked for metal and packed into cartons.
