Cardamom processing turns freshly harvested green capsules into cured, graded cardamom and ground cardamom. The capsules are washed, cured in warm air so the green colour is held, polished to remove surface residue, then graded by size, colour sorted, and packed whole or milled with the husk.
Complete Cardamom Process Flow
Freshly picked capsules are washed and rinsed clear of field soil and leaf. Loose stalk and immature capsules are taken out before curing begins.
Capsules are cured in warm air, which dries them while holding the green colour buyers look for. Air is dehumidified so drying continues steadily without scorching the capsule wall.
Cured capsules are polished to rub off the remaining calyx, stalk ends and surface residue. The rubbed-off dust is drawn away so it does not settle back on the capsules.
Capsules are graded by size, which is how bold cardamom lots are made up, and separated by colour. Shrivelled, split and discoloured capsules are rejected.
Cardamom is milled either as the whole capsule or as seed after the husk has been separated. Milling is kept short and sifted, because the seed is oily and the aroma is volatile.
Whole capsules and ground cardamom are packed in tins, canisters or vacuum packs and labelled.
