Paddy is received and cleaned of straw, chaff, soil, stones and ferrous particles before it enters the mill. Because brown rice keeps its bran layer, anything not taken out at this stage stays on the finished grain.

Paddy is dried and then rested in bins so moisture equalises through the grain before it reaches the huller. Bran-bearing rice is sensitive to storage moisture, so the moisture level is checked before milling and again before packing.

Only the outer husk is taken off; the bran layer and germ that give brown rice its colour and character are left intact. Husk is carried away in the air stream and any grain that has not shelled is separated out and returned to the huller.

Loose bran dust and light husk fragments released during dehusking are drawn off the grain stream. No whitening or polishing is carried out at this point, as the bran layer itself has to stay on the grain.

Grain is separated by size into whole and broken fractions, and an optical sorter takes out immature, damaged and off-colour grains along with any paddy still carrying husk. The sorter is set against the natural bran colour of the lot rather than a white grain surface.

Sorted brown rice is weighed and filled into consumer packs, with vacuum or gas-flushed packing used where the contents have to be kept away from air. The retained bran layer carries oil, so brown rice is commonly packed in barrier material rather than plain woven sacks.
