Almond milk is made from shelled almonds that are cleaned, sorted, blanched and skinned, then soaked and wet-ground with water; the slurry is separated from the almond solids, blended, homogenised, heat-treated and filled.
Complete Almond Milk Process Flow
Shelled almonds are cleaned of dust and shell fragments, then sorted by colour and appearance. Discoloured, shrivelled and damaged kernels are rejected before they can reach the grinder.
Kernels are blanched in hot water so the brown skin loosens, and the skin is then rubbed away. Skinning gives a paler drink with a milder, less astringent taste.
Blanched kernels are soaked and then ground with water into a smooth slurry. Finer grinding releases more of the nut solids into the liquid.
The slurry is separated so the almond pulp is drawn off and the milk passes on. The pulp is pressed to release the liquid still held in it and then collected for use in flours, snacks and animal feed.
Water, salt, oil and stabiliser blends are dosed in and mixed to a uniform batch. Homogenising keeps the milk from separating into layers while it stands on the shelf.
The blended milk is pasteurised or sterilised, cooled and filled into bottles or cartons. Filled packs are capped, labelled and collated for dispatch.
